Bacon, Cheese, and Tomato Pie

Ingredients Serves 6

1 (9 inch) deep dish pie crust
4 large tomatoes, peeled, sliced, drained on paper towels, and pat dry
12 cup fresh basil, chopped
3 green onion, thinly sliced
12 lb bacon, cooked, drained, and chopped
12 tsp garlic powder
1 tsp dried oregano
12 tsp red pepper flakes, or to taste
2 cup cheddar cheese, shredded
14 cup mayonnaise

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Bake pie crust for 10 minutes or until lightly browned, then cool slightly.
  3. In alternating layers, fill pie crust with tomatoes, basil, scallions, bacon, garlic powder, oregano, and red pepper flakes. In a small bowl, mix together cheddar cheese and mayonnaise. Spread mixture over the top of the pie. Cover loosely with aluminum foil.
  4. Bake for 25 minutes. Remove foil and bake for an additional 20 to 25 minutes or until the filling is bubbly and the top has browned.
