Another recipe that it’s about time it made it’s way to the blog! If you missed it, I made easy shredded chicken last week and am following it up this week with some paleo chicken burrito bowls! I’ve been making this recipe for a year now and am finally sharing! They are loaded with protein, veggies, and healthy fats and a staple in our house and make a great option for meal prep!

If you have had Chipotle, or at least heard of it, then you know where this idea came from. It’s pretty much one of their burrito bowls, but made at home, which saves you some cash money. I also opted to use cauliflower rice to keep them paleo and Whole30 friendly.
We switch back and forth between white rice and cauliflower rice at our house – Michael usually always has his with white and I will have cauliflower or white depending on how I am feeling and if am enjoying it around my workout. Either way, you can’t go wrong.

The beauty of these bowls are they make 5 servings and can be done in under an hour! I’m all about making meal prep as easy and streamline as possible and these follow suite. All you need to do is chop up the veggies and roast. While they are roasting, make the cauliflower rice on the stove. You can either buy a head of cauliflower and rice it yourself, or buy it already riced. I went with the already riced kind as it makes life easier #lazy

Then just chop up some lettuce and tomatoes for the salad and make the guacamole. WARNING – yes the guacamole will brown throughout the week, but it still tastes the same. If you don’t want it to get brown, don’t make the guacamole and just wait till the day of to cut up an avocado.
I recently found these meal prep containers on Amazon and they are great! They keep everything fresh and are better for the environment since they are glass.

From a rough breakdown, these homemade chicken burrito bowls cost about $2.50 per meal. At Chipotle I’m pretty sure you will be paying at least $8, and then you gotta add on some more $$ for guac, because don’t lie, you probably will add it. If you are trying to save some money this year or just stay on track with healthy eating, meal prep is a great way to do that!
I much rather save some cash so I can get my nails done or plan a big trip than eat Chipotle every day anyways!
